I have several domains on my webhost and I want to use XOOPS for several of them. However I can only see how to do this by loading XOOPS into the root of each domain, taking up some 10Mb of space for each.

I would like to install the XOOPS system once on my server and then use the coding for each of several sites. A bit like I have one implementation of MySql but it is used by several sites.

Is this possible? Can anyone point me to documentation, or give me guidance, please

The short answer is "no".
If you use only one installation, you will be sharing the same files across all the sites.
Is space an issue?
I have about 30 XOOPS websites running on my server without any difficulties.

Here's a link to an article that might send you in the right direction:

Using 1 database for multi-sites is possible in order to share information across differnt sites, but I don't think you could use 1 XOOPS installation.

What about the multi-site hack available here?

This hack apparently demands considerable expertise to set up. As Jan Pederson says, "be warned"/You will find discussion here.

Personally I prefer to use multiple installations. Much less chance of messing things up.

The multi-site hack does just as I said, allows you to use 1 database for multiple installations.

Ahhh! I have never used it, so hadn't got that far in understanding it.
