I have no idea how to update them, do I simply upload to the directory where XOOPS is located?
These are update scripts that help you update a module. Use this only if you have instaled before any version of newbb (forum module for Xoops). If you have now instaled NewBB 1 and you would like to upgrade to Newbb 2.0 you have to replace all the files, run the update script (only one from the list) ant then update module in admin area.
If you don't have any NewBB instaled then you don't have to run any of these scripts.
How to run a script ?
for example, if you are upgrading from newbb 1 to newbb2 just enter this in your browser to visit this page:

Here you have a new main.php file which you have to replace with the older one. Don't delete anything!

I have no idea which of these RC3 or RC2 my version of XOOPS is.
RC2 or RC3 are not version of your XOOPS but your newbb module. RC means Release candidate so it means this is not a full version. If you have Newbb 2.0 for the first time now, you don't have to worry about that!
