Well, I was able to solve my problem. I reinstalled XOOPS over the old version on the server. Then, when I installed xoops, I chose another prefix.
Then, I manipulated the MySQL files by renaming the "xoopsnews" prefix to "xoopsnews1" and then renaming the original "xoops" to "xoopsnews" which was my new prefix. Kind of a round about way, but worked for me and guaranteed that I didn't lose anything. LOL
