I'd appreciate some recommendations for a local server I can use to work my sites before I upload them to my host.

It's been awhile since I've used one. Thought there may be something newer and better.

Xampp is the best one i use myself.

Yes xampp is the best for simple ease of use.. Just download install and now you have apache MySQL php and more!

List of packages

In this list you can see which version does come with which release of mysql/php/...

So if you already have a live server you can choose a local setup with similar or close versions to the one on your live site.

Yes you want to be a bit careful with Xampp if you want to mirror your web server on your local PC. Just going for the latest version will install MySQL 5.n and PHP 5.n by default, which may not reflect your hosting setup.
A thread is for life. Not just for Christmas.
