Something has happened and I don't understand what it is. Some registration fields that are required are letting users complete registration with the fields left empty. Is there some way I can check this other than what I've already done?

UPDATE:
After much eye strain - I finally figured it out. One field was causing the problem. I'm not exactly sure what it is, but I think it has something to do with no default being selected on that field. It was above the other fields (order-wise) and caused any fields placed below it to not force the user to complete the field. So glad the mystery is solved!
