Is there any way to see some user stats with the latest Zoops, but without any added modules?

Mainly I would like to see who of my current registered users has logged in and when.

No, not without a module that records the data you're asking. It is possible to do this at the server level, but then you can only track the IP and page requests, not the XOOPS site member name and when he logged in etc.
