Most of the old themes should work, so you don't need to use any of the new functionality. For example the "default" them doesn't include any of the folders.
If you want to learn more about some of the other folders, like the xotpl, there is some documentation on
SourceForge - look at the Morphogenesis-related files.
There is also an excellent new book
"Designing for XOOPS", that I highly recommend.
