instead of a default threaded view when viewing messages?

Try, for system wide, System Admin - Preferences - General Settings

If for newbb 2/CBB there is also a setting in the modules setting page.

I'm seeing such a setting in System Admin - Preferences - General Settings for comments, but not for forum posts. Am I perhaps overlooking it?

If using newbb 1 the forum follows the settings for comments. If using newbb 2/CBB the setting is in the module settings page.
