What do I need to set to remove the space from menus?

I have a few different themes and the Menu lists are spaced far apart. I would like the lists to be more compact with a space equivalent of
between them.

What in the CSS do I need to change?

If I'm understanding your question, you just need to adjust the margin/padding settings in the td#mainmenu and/or td#usermenu elements.
