IMO:the best way is to just make your own html menu using style rules from your theme to define the look.
This topic is overly written about Im sure you can find more details. But a similar post (last week) was posted here
on this thread.
The reason you are having problems with the main menu is because it is logically based on the modules you've installed and the order you have them set at. It sounds more like you want just a simple nav that goes to your own content based page (for instance on a standard html page you need only add the header and footer. yet another topic)
There is a menu called imenu that was out for awhile that seemed to work, don't know if its still supported or what not. BUt from my understanding it created a menu that you can add links to...thats all.
Anyways good luck the answers are definately within this site...just got to do a bit of digging around im afraid. It really becomes a matter of how you search...
