MIME Type Errors?

I was uploading my templates fine for awhile through the templates admin interface. Then I think I uninstalled and reinstalled a module that was using a template. I tried to upload my template again, but I get a MIME Type: text/plain not allowed when I try to upload my smarty template. It's html, and I don't know what it's reading it as text/plain. THe weird thing is when I copy and paste the template code into the edit box through the admin interface and test the template, the smarty code is acting as if it's plain text. I saved the template as an HTML file as well. There just this one simple string:

{html_table loop=<{$edition_limages}> cols=3 table_attr='border="0"'}


I have a feeling maybe I'm specifying smarty tags incorrectly somewhere maybe, but I kept double-checking and I see no problem.

Keep in mind MIME types are also configured on the server itself, be it Apache, IIS or whatever. Don't know if this has a bearing at all

Yeah, I was taking that into account, although I wouldn't understand why all of a sudden it would stop working. If it, in fact, configured by the server, would that also explain why I see the plain text of the smarty tags instead of what should be displayed? I don't see why... the smarty tags are all server-side stuff :/
