I can assure you Minimalist is totally flexible,
simply it don't have a 100% width,
have instead a min-width hack working with IE also.

there are tons of expandable themes out there. You are going to need to be much more specific. Is there are particular color scheme? Are you only interested in table-less?

Zeta is a nice theme but it is still far from universal. I have installed it on several websites and it requires a ton of work.

applying widths to every aspect = GAHHH! It also does not play with modules very nicely.

All in all it is a nice theme, and as far as table-less go I would agree that it is the best choice for a starter, but don't assume that its going to be an install and go, as with any theme really you are going to have to put work in it.
