Modifying Template Look and Feel

I got a new site loaded and working and I'd like to take a peak at how changes are made to templates. I've got several sites I'd like to switch into CMS, but I want to keep the look as much as I can to the old site. I'm anxious to see how this process works. Can anyone point me in the right direction?
