What is Key and Value when creating custom fields?

A Quick Question about Extended Profiles module of XOOPS 2.2.3. When creating a new custom field some of the datatypes have options for "Key" and "Value". What are these and how should they be used.

My guess is that those are field types that have multiple options, such as a menu. I suppose that "key" would be the internal value, and "value" would be the displayed value.

An easy way to verify that would be to create one of those fields, add some key/value pairs, and then look at the result (HTML source).
