It looks like this:
define("_SUBJECT","Subject");

i've even been able to put
define("_SUBJECT","† Subject");
to get † Subject

How would I be able to add color... or even an image..
when i tried the <font> attributes they wouldn't work.

anyone know a way around this?

colour and layout shouldn't be done in the language files. Edit the template that uses the constant instead.
