I'm not sure why you state this. If you enable it in the Extended Profiles -> fields, it is available to the user in their profile edit page. You can look at my site http://www.4x4n.com (registration not required) as it a "selectable" item in the registration process.

well I'll be - that's a lot easier than the method I chose! I never went through the admin options in the Extended profile module ;)
